Bhukkhad Talks SPECIAL AGENTS: FBI - (Food, Beverages, Innovation - A roundup of the culinary specialists of Dehradun)

It takes a lot of courage and determination to believe in something, and even more to stick with that belief. Bhukkhad Talks by FoodPremi presents a few outlets in Dehradun that not only have a certain specialty, but also have an impressive variety of the same to earn them the titles of 'Bhukkhad FBI Special Agents’. ---------------------


Agent Name: The Dim Sum House Special Skill: Dimsums (a.k.a Momos) – 150+ Bhukkhad FBI Clearance: License to Dumpling. Doonites have a special place for momos (dimsums) in their hearts (and in their tummys) and The Dim Sum House (TDSH) takes this love to a whole new level! The USP of TDSH is that they serve over 150 types of momos! Yes, you read that right - over a hundred-freaking-fifty! How? They offer 13 different fillings (veg, broccoli, chicken, mutton, etc) that are prepared in 12 unique ways (steamed, fried, tandoori, soupy, kothey, etc)! And if that doesn't cover your meal, they also offer soups (Chinese and Continental), starters (Chinese), salads, pastas, pizzas and a main course (Chinese and Continental).
Location: Pacific Hills Complex, Mussoorrie Diversion (with ample parking).
Seating and Ambiance: Like most other restaurants in the Pacific Hills Complex, TDSH offers indoor as well as (limited) outdoor seating. The interiors have been tastefully done with a bamboo-shoot decor on the ceiling, hanging lamps for light and a few other tidbits like a painting of Buddha. And they have a tiny personal space with red lighting that looked perfect for a romantic date.
Food: We were famished when we reached TDSH, and decided to try out something new with every serving. Consequently, we ended up trying 5 different types of momos and two beverages! BLUE LAGOON is the standard off-the-shelf preparation with Blue Curacao concentrate. ITALIAN SMOOCH is a classic Mojito, made fresh, with a dash of cola. BROCOLLI SCHEZWAN MOMOS had a delicious thick tangy sauce that almost made me forget that I was eating broccoli! Definitely the best way to eat our greens. VEG LEMON CORIANDER MOMOS were prepared in a somewhat creamy sauce and were almost melt-in-the-mouth soft! CHICKEN MANCHURIAN MOMOS were fried momos with a crunchy exterior. What took me by surprise was the very distinct after-taste of the classic Manchurian! CHICKEN GARLIC SAUCE were my second favourites with their crunchy fried exterior, soft juicy interior and a sauce that had its own amazing flavour (and, despite my reservations, not similar to the schezwan sauce)! MUTTON AFGHANI MOMOS were my favourites for the meal. They were tandoori momos with a creamy marinade topped with mayonnaise and a dash of lemon - served with a shredded salad in mint mayonnaise! Bhukkhad Note: The momos are all pretty large and have servings of 6 per plate. ---------------------
Agent Name: Kulfiano Special Skill: Kulfi – 30+ Bhukkhad FBI Clearance: License to Freeze. The 'kulfi" is the Indian version of ice cream which is usually of a milk base with flavours imparted by various spices and nuts (Kesar, elaichi, pista, badam, etc). Kulfiano, however, disrupts this traditional form by offering 100% natural fruit flavours (no preservatives, no artificial colours) in more than 30 varieties!
Location: Ground Floor, Meedo Arcade (Behl Chowk), Rajpur Road.
Seating and Ambiance: Nothing too fancy - a few tables and chairs (classy metal and glass ones) provide the bare essentials. Their lighting is incredible - it's a plain white, but it's one of the BEST lighting setups we've come across (specially for food photography :P). Food: We tried 4 things - 2 "customer favourites" (JAMUN and PAAN), an out-of-the-box flavour (KIWI) and an unusual delight (PURA AAM). The KIWI and JAMUN were, as advertised, just like eating the fruit. A good quantity with intense flavour that was a testament to the premium quality of fruits used. Also, the kulfis retained the original texture of the fruit making the whole experience rather exquisite. PAAN tasted exactly like a paan would (since it was essentially a paan mixed with kulfi base). What they've done right is that the betel leaf and fillings were of a great quality with lots of flavour, and that the kulfi base didn't dampen the original taste.
The PURA AAM was the star of the show. It's a whole unpeeled mango with the seed removed and stuffed with Kesar Pista Kulfi - and then frozen. Before serving, the staff defrost the mango with a water bath and hair dryer (a "jugaad" that works perfectly), remove the peel and then cut it into slices. What you get is rings of semi-frozen mango with a kulfi centre and it has an incredible taste!
Bhukkhad Tip: You can eat the Kulfi on a stick or have the staff cut it into easy-to-eat bits (served in a plate with toothpicks). ---------------------
Agent Name: T bistro Special Skill: Tea – 60+ Bhukkhad FBI Clearance: License to Brew. While one can eat healthy, it’s just as important to drink healthy too. When it comes to health, Tea is considered to be one the most effective and affordable beverages. From delightful flavoured teas to healthy herbal and green teas, T Bistro offers the perfect setting for a drink, a meeting or a light meal. This place offers 60 types of tea currently, and the number is expected to reach up to a whopping 101! Even though they offer various types of mocktails, shakes and coffees, it’s the teas that you should aim for. Location: Opposite Crossroads Mall, E.C. Road
Ambiance and Seating: The ambiance was elegant and definitely very unique, with movie posters all around. It’s an open place, and has fans for every table. There is plenty of natural light during the day while the artificial lighting fixtures make it look gorgeous at night. The amount of effort put into this category sets T Bistro apart from other eateries.
Food: Out of the 60 available varieties, Bhukkhad tried 5 flavours of tea. GINGER LEMON HONEY TEA: It’s black tea with ginger, lemon and honey. It’s a calming and relaxing tea that can ease symptoms for cough and cold and boost your immune system. And it tastes really good, too! THYME TEA: A very soothing tea that tasted somewhat like pizza spice mixed with hot water (in a good way), owing to the thyme. Rich in volatile oils, minerals, beneficial phenols and flavonoids – this is a healthy beverage choice. NETTLE TEA: The taste might not be very pleasing, but this one is REALLY beneficial for the body. Nettle tea is made from the leaves of the stinging nettle plant and is a diuretic i.e. it effects the kidneys directly. It can also treat allergies associated with hay fever. One thing to be noted is that the plant has a few known side effects and, as is with any medicinal preparation, you should consult a healthcare practitioner before adding nettle tea to your diet or treatment plan. BLACKCURRANT BRACER: A flavoured tea which was sweet enough to skip added sugar. Why have this? The anthocyanin content of black currants is said to slow down and inhibit the growth of cancer cells! Last, we had the conventional T BISTRO SPECIAL MASALA CHAI with milk and sugar. It had a wonderful aroma and a consistent taste courtesy of all the spices – perfect for everyone!
Bhukkhad Note: Avoid adding sugar to the herbal teas. --------------------- While it's not really as lethal as espionage, food (and it's specialization) is just as exciting! Know of a 'Special Agent' that we missed? Let us know!

An account of some must-try street foods of Dehradun

Have you ever tried these food ? lets try it.


Indian cuisine is known for its spice and has a plethora of quick-bites representing the same, lovingly known as "Street Food" since some of the BEST places to have these delicacies are small roadside vendors. Bhukkhad Talks by FoodPremi brings to you a small cover of a few incredible street food joints of Dehradun.


"Jaina Ke Samose" (near Bindal Bridge on Chakrata Road)




Where to get fresh samosas and jalebis? The answer is Jaina, a 40-year-old establishment, now run by the third generation of the owners! What sets their preparation apart is the inclusion of a slice of paneer in the samosa (yummy!).

"Dwarka Store ke paas Bun-Tikki" (near Dwarka Store on E.C. Road)




The Indian version of the burger urf "Bun Tikki" is classically prepared with crispy potato patties topped with onions, tomatoes, saunth (sweet sauce), green chutney and curd (with a dash of masala). The "thela" near Dwarka Store has been there since 1984 (reminds us of 'The Martyr's Corner' by R. K. Narayan, doesn't it?), and serves an excellent preparation of bun-tikki (with two tikkis!) - all for Rs.15/- per plate !


"Chetan Puri Wala" (near Hanuman Chowk)


Puri + Chole + Aloo Sabzi + Kaddu Sabzi + Chutney -- that's the famous 'Poori Thali' served at Chetan Puri Waala. Their popularity is evident by the waiting period you have to face no matter what day or time it is, but the food is worth it ! A steady stream of orders comes from the nearby shops who have relied on the shop ever since it opened, but that hasn't limited the reach of their customers. People travel from all parts of Doon to eat here, and you should too !


"LalaJee's Angithi - Tandoori Momo" (Connaught Place, Chakrata Road)




Momos are delicious little "potli"s of heaven that come in an astonishing variety of preparations. Tandoori momos combine the delight of fried momos with the health of an oil-free preparation, and this concept was first introduced in Dehradun by LalaJee's (two years ago). They offer momos with two different fillings (veg or paneer) that are prepared in three different ways - Afghani (cream), Masala & Achari.


"Parade Ground pe Dosa" (Opposite Doonga House, Parade Ground)




South-Indian food has a special place in our hearts (and a recurring spot in our diets!) and the "Madrasi Dosa" vendor at Parade Ground has been serving a consistent quality and taste of the same since 1992 ! The menu is pretty standard - Dosa (masala or plain), Idli and Vada. Each of these has its own distinct flavour and appeal, with the complimentary sambar and chutneys (red: tomato;  white: coconut) adding to the experience!


"Katlambe Thela after a matinee" (Opposite Natraj Cinema, Chakrata Road)




Though no longer main-stream after the opening of multiplexes, Natraj Cinema was one of the most visited halls of Dehradun due to its access to everyone from the other side of Bindaal Bridge. And, despite the intermission snacks at the cafeteria, the "thela" serving katlambe (a deep-fried heavy "big-brother" of bhature) has been a regular post-movie meal since 1996 !


"Capri ka Chole Kulche wala" (near Capri Trade Center, Chakrata Road)




Chole-kulche are the oil-free cousins of chole bhature and katlambe - the Chole are boiled and served in a mix of chutney, onions, tomatoes, chillies and spices while the Kulche are flat breads that are toasted (with or without butter) on a "tawa" before serving. While this healthy (and tasty!) delight can be found all over town, what sets the vendor at Capri apart is that he's been in the business (and more or less the same spot) since 1970 ! 


"Shopping break at Sumit Banta Shop" (Paltan Bazaar)




Bunta is the "desi" version of Lime Soda, and we've ALL had a glass at some time in our lives. Sumit Banta Shop takes the experience to another level with a menu of nearly 10 different flavors (masala, jeera lemon, pudina lemon, strawberry, orange, rose - among others ! They make their own soda and also offer a milk-based rose cooler during the summers.


"Rajpur wale Sardarji ke Pakode" (Near Rajpur Chowk)


This is undoubtedly one of the most well-known food-landmarks of Dehradun. It was established in 1952 (OMG !) and even features in some of Ruskin Bond's stories! They have samosas in the morning and afternoon, and crispy pakode in the evenings (served with imli chutney) - one plate is never enough!


While this isn't even close to being a comprehensive list, all the places mentioned above play a major part in Dehradun's street food heritage and offerings.
